Kaanji is a beverage. It is a fermented drink. Kaanji is a specialty of spring season. Kaanji is one of the traditional drinks in Pakistan. People Pakistan especially Punjab are very fond of it. It is a delicious salty and sour drink. This drink is made of black carrot. The color of this drink is dark purple often seems like black. One can find the lots of carrot chunk in it. Kaanji drink can be served as an appetizer. Kaanji is very strong in its taste; one would either fall in love with it or hate it totally.

Ingredients of kanji are not that complicated. However, it takes 3 to 4 days depending on the condition of sun. Basic ingredient is black carrot. Other required ingredients are mustard powder, red chili powder, black salt and water. If black carrot is not available than beetroot can be added that helps to give a dark rich purple color. However, it is preferable to use the black carrot to get the real taste.  Preparation time for kaanji is not more than 20 minutes but it would take 3 to 4 days to ready because it is a fermented drink and fermentation would be required.

To make kanji first wash the carrots and grate them. Cut it into the moderate pieces lengthwise. Grind the dry mustard seeds and mix them well with salt and red chili powder. In past earthen pots were used to make kanji but now glass jars can be used as well. Put all the ingredients in the glass jar or earthen pot and pour water on it. Quantity of water should be high so all the ingredients could dip in it well. Stir it well. Now keep the jar under sun for 3 to 4 days. Do not forget to shake the jar 5 to 6 times a day. Kaanji should be ready within 3 to 4 days. To serve kanji put two to three chunks of carrot in a glass and pour sour and salty cold drink on it. Always stir it well before serving.

Kanji has some health benefits as well. Black carrot contains high quantity of antioxidants and nutrients that are inhibitors of bad cholesterol. Mustard seeds are a rich source of B-complex Vitamin and Vitamin E. it also contain some minerals like iron, calcium, copper, zinc and many more. Black salt helps in constipation and indigestion problems. Overall kanji is a healthy drink.
